If Clark Kent were edible he’s most assuredly be these muffins. Just look at them… Quiet, unassuming, good looking, humble even. But peel back the top layer of wholesome sweetness and you’re in for a power packed shock you never even saw coming.
Just like Clark Kent’s alter ego these muffins are the consummate do-gooders. Packed with sweet persimmon, healthy zucchini and protein. Protein? Uh huh! Quinoa and greek yogurt baby! Raw sugar and a hint of brown sugar with the dark chocolate drizzle set my soul on fire.
Super good and good for you? Yes!

Hey!!! Listen – depending on how juicy your persimmon is – you might wanna add a bit more FLOUR
