If Clark Kent were edible he’s most assuredly be these muffins.  Just look at them… Quiet, unassuming, good looking, humble even.  But peel back the top layer of wholesome sweetness and you’re in for a power packed shock you never even saw coming.

 

Just like Clark Kent’s alter ego these muffins are the consummate do-gooders.  Packed with sweet persimmon, healthy zucchini and protein.  Protein? Uh huh! Quinoa and greek yogurt baby!  Raw sugar and a hint of brown sugar with the dark chocolate drizzle set my soul on fire.

 

Super good and good for you? Yes!

 

Super Man would be proud.

 

 

 

 

Hey!!! Listen – depending on how juicy your persimmon is – you might wanna add a bit more FLOUR ;) The batter should be moist but not runny!! After many failed attempts – please take my word for it – ha!

      Ha-ha-ha and thank you!! I think about food a lot :) Let me know how they turned out for you – just keep in mind to make sure your batter is moist but not sticky – you may need to add a bit more flour depending on how juicy your persimmon is! Have a great day!
